Lavender Iced Tea, Without the Syrup
Café lavender iced tea is black tea, ice, and lavender syrup. You can skip the syrup if the lavender is already in the blend.
A lavender iced tea from a café is usually three things: brewed black tea, a glass of ice, and a pump of lavender syrup, which is sugar water that spent time with the flowers. It is a good drink, and it is always a sweet one, because the lavender arrives already dissolved in its own sugar.
Lavender drinks had a big summer. Google's seasonal trend report lists lavender iced tea among the drink searches that climbed this year, next to peach iced tea and cucumber and mint infusions.
Home recipes replace the pump with a spoon of culinary lavender steeped alongside the tea, plus one warning repeated everywhere: measure carefully. Lavender is a strong flower, and past a pinch the cup drifts from floral toward soap.
The blend that does the measuring
The panel on Dusk reads apple, cinnamon, lavender, chamomile, Amazonian vanilla, Cusco black tea, and lemon balm. The lavender was dosed by a blender against six other ingredients, so it sits in the middle of the cup, with the chamomile, instead of on top of it. The tasting notes for the blend run spiced apple, honey, and floral. Apple covers the sweet side; there is no sugar anywhere in the pouch.
Over ice in ten minutes
For one tall glass:
- 16g Dusk, about three heaped tablespoons
- 240ml just-boiled water
- a full glass of ice
Steep the 16g in the 240ml for six minutes and strain. That is double strength on purpose: the melting ice is the other half of the glass. Pour the hot concentrate straight over the ice, and add a thin slice of apple or a cinnamon stick if it is going in front of someone.
The overnight jug
For a pitcher, skip the kettle entirely. 50g of Dusk to about six cups of cold water, overnight in the fridge, up to twelve hours. It comes out drinking like cold spiced apple, and it keeps three to four days cold. Why the cold route barely turns bitter is its own story.
And if the weather turns before the pouch runs out, the same blend makes a hot tea latte. That one is called the Amazon Fog, and it has its own page, milk included.
On the caffeine
The Cusco black tea gives Dusk its low caffeine. If you want none at all in the glass, Rooted and Gather are the caffeine-free blends, and both take the same overnight method.
