How to brew

Brew it in three steps

  1. 01 Scoop 8 g, or 10 g for Daybreak.
  2. 02 Steep 300 ml water. Rooted, Dusk, and Gather take it straight off the boil. Daybreak takes it rested 2 to 3 minutes: hot, not boiling, for the green tea.
  3. 03 Strain Any strainer works. No special equipment.

  • Rooted · 8 g · the full 10 to 11, boldo is a firm leaf
  • Dusk · 8 g · 6 to 8, past 8 the black tea turns tannic
  • Gather · 8 g · 8 to 10, hard to oversteep, and it cold-brews well

Cusco, Peru

Yes, Peru grows tea.

The Cusco on postcards is too high to grow tea. The Cusco below it isn't.

In La Convención, where the Cusco region drops toward the Amazon, gardens around Huyro and Huayopata have grown Camellia sinensis for roughly a century, between 1,400 and 2,200 meters in the ceja de selva, where the Andes meet the jungle. Cusco green tea opens Daybreak, the morning blend. Cusco black tea anchors Dusk, the evening cup.

Elsewhere in the box: camu camu picked from canoes in the flooded Amazon, black mint, and cardamom from Villa Rica.

Good to know

Two of the four blends contain no tea leaf at all. Rooted and Gather are herbs and fruit, closer to manzanilla or an emoliente than to anything called breakfast tea. Daybreak and Dusk carry green and black tea grown in Cusco.

Daybreak is naturally caffeinated from Cusco green tea, with less caffeine than a cup of coffee. Dusk is low caffeine from its Cusco black tea base. Rooted and Gather are caffeine-free.

One 300 ml mug. Daybreak brews at 10 g; Rooted, Dusk and Gather at 8 g. Every blend ships with a pour card naming the dose, the minutes, and when to drink it.
